- Zucchini Fritters Ingredients
- 2 zucchini’s
- 1 tsp kosher salt
- 1 tbsp of freshly grated lemon zest
- 1/4 cup finely chopped cilantro
- 2/3 cup of shredded parmesan
- 1 medium clove garlic, minced
- 1/4 teaspoon freshly ground black pepper
- 2 large eggs, lightly beaten
- 1/2 cup organic corn meal
- 2 tbsp coconut oil

[one_third]STEP 1 Grate zucchini into a medium bowl (squeeze out any excess water into a sink). Add salt, lemon zest, chopped cilantro, parmesan, garlic, pepper, and eggs. Mix well to combine. Slowly add corn meal, stirring all the lumps out.[/one_third][two_third_last][/two_third_last]
[one_third]STEP 2 Heat 2 tablespoons of coconut oil in a large pan over medium-high heat until oil sizzles when you drop a small amount of zucchini mixture into the pan. Pour 2 tbsps of mixt into pan; repeat, spacing fritters a few inches apart.[/one_third][two_third_last][/two_third_last]
